Mixed Berry Crisp
Sweet-tart berries with a golden, buttery oat topping
Ingredients
Instructions
-
Prepare the ovenPreheat your oven to 375°F (190°C). Lightly grease a 9-inch square baking dish or 2-quart baking dish with butter or cooking spray.
-
Prepare the berry fillingIn a large bowl, gently toss together the strawberries, blueberries, and raspberries. Add the granulated sugar, cornstarch, lemon juice, and vanilla extract. Gently stir until the berries are evenly coated. Transfer the mixture to the prepared baking dish, spreading it into an even layer.
-
Make the crisp toppingIn a medium bowl, combine the rolled oats, flour, brown sugar, cinnamon, and salt. Mix well. Add the cold butter pieces and use your fingers, a pastry cutter, or two forks to work the butter into the dry ingredients until the mixture resembles coarse crumbs with some pea-sized pieces remaining.
-
Assemble and bakeSprinkle the crisp topping evenly over the berry mixture, covering it completely. Place the baking dish on a rimmed baking sheet (to catch any bubbling juices) and bake in the preheated oven for 30-35 minutes, until the topping is golden brown and the filling is bubbling around the edges.
-
Cool and serveRemove from the oven and let cool for at least 15 minutes before serving. The crisp can be served warm, at room temperature, or cold. For an extra special treat, serve with a scoop of vanilla ice cream or a dollop of whipped cream.
