  1. Prepare the lettuce cups
    Carefully separate the butter lettuce leaves, keeping them intact. Wash thoroughly and pat dry with paper towels. Arrange on a serving plate and refrigerate until ready to serve.
  2. Cook the base ingredients
    Heat sesame oil in a large skillet or wok over medium-high heat. Add garlic and ginger, stirring constantly for 30 seconds until fragrant. Add crumbled tofu and mushrooms, cooking for 3-4 minutes until the mushrooms begin to soften.
  3. Add vegetables
    Add the diced water chestnuts and red bell pepper to the skillet. Stir-fry for another 2-3 minutes until the pepper begins to soften but still maintains some crunch.
  4. Create the sauce
    In a small bowl, whisk together the hoisin sauce, soy sauce, rice vinegar, and sriracha (if using). Pour over the vegetable mixture in the skillet and stir to coat everything evenly. Cook for another 2 minutes until the sauce thickens slightly.
  5. Finish the filling
    Remove the skillet from heat and stir in three-quarters of the sliced green onions. Taste and adjust seasoning if needed. Let the mixture cool slightly for 1-2 minutes.
  6. Assemble and serve
    Spoon 2-3 tablespoons of the vegetable mixture into each lettuce cup. Top with chopped nuts and remaining green onions. Serve immediately, allowing diners to pick up the wraps with their hands.
