Prepare the ingredientsArrange all your prepared ingredients in separate bowls: cooked vermicelli noodles, julienned vegetables, fresh herbs, lettuce leaves, and halved shrimp. This will make assembly easier and more efficient.

Make the dipping sauceIn a small bowl, combine fish sauce, lime juice, water, and sugar. Stir until sugar dissolves completely. Add minced garlic and chopped chili if using. Set aside to let flavors meld together while preparing the rolls.

Prepare the rice paperFill a large, shallow bowl with warm water. Dip one rice paper wrapper into the water for about 5 seconds until it begins to soften. Remove and lay flat on a clean, damp kitchen towel or a large plate.

Assemble the rollsOn the bottom third of the rice paper, place a lettuce leaf, followed by a small handful of vermicelli noodles, a few strips of carrot and cucumber, and several herb leaves. Place 3-4 shrimp halves, cut side up, in a row along the middle of the paper, positioning them so they'll be visible through the wrapper.

Roll properlyFold the bottom of the rice paper over the filling, then fold in the sides. Continue rolling tightly until completely sealed, like rolling a burrito. The rice paper will stick to itself, creating a secure roll. Transfer to a serving plate and cover with a damp cloth to prevent drying out.

Repeat the processContinue with remaining rice paper wrappers and fillings until all ingredients are used, making approximately 12 rolls. Keep the finished rolls covered with a damp cloth as you work to prevent them from drying out and sticking together.

Serve and garnishCut each roll in half diagonally if desired, and arrange on a serving platter. Sprinkle with chopped peanuts and serve immediately with the dipping sauce on the side. For best presentation, make sure the colorful fillings are visible through the translucent wrappers.
