Prepare the papayaPeel the green papaya and remove the seeds. Using a julienne peeler or grater, shred the papaya into long thin strips. Soak in cold water for 5 minutes, then drain well and pat dry with paper towels.

Make the dressingIn a mortar, pound the garlic and chilies into a rough paste. Add the palm sugar, fish sauce, lime juice, and tamarind paste. Mix until the sugar is dissolved and the dressing is well combined.

Pound the saladAdd the green beans to the mortar and lightly pound to bruise them. Add the shredded papaya, tomatoes, and dried shrimp (if using). Gently pound and mix everything together with a wooden spoon, bruising the ingredients to allow them to absorb the dressing.

Season and adjustTaste the salad and adjust the seasoning by adding more fish sauce for saltiness, lime juice for sourness, or palm sugar for sweetness as needed. The flavor should be a balance of spicy, sour, sweet, and savory.
