  1. Prepare the broth base
    In a large pot, bring the chicken broth to a boil. Add the lemongrass, kaffir lime leaves, galangal or ginger, and half of the chilies. Reduce heat and simmer for 10 minutes to infuse the flavors.
  2. Add vegetables
    Add the mushrooms, red onion, and tomatoes to the broth. Simmer for about 3 minutes until the mushrooms start to soften but vegetables still maintain their shape.
  3. Season the soup
    Stir in the fish sauce, Thai chili paste, and palm sugar. Taste and adjust seasonings if needed. The soup should have a balance of spicy, sour, and slightly sweet flavors.
  4. Cook the shrimp
    Add the shrimp to the soup and cook for 2-3 minutes until they turn pink and are just cooked through. Be careful not to overcook the shrimp as they will become tough.
  5. Add the finishing touches
    Turn off the heat and stir in the lime juice and remaining chili slices. The lime juice should be added at the end to preserve its fresh flavor.
  6. Serve the soup
    Ladle the soup into bowls, making sure each serving has a good amount of shrimp and vegetables. Garnish with fresh cilantro leaves. Traditional serving includes leaving the aromatic herbs in the soup, though they are not typically eaten.
