Prepare the pickled vegetablesIn a bowl, combine the julienned daikon and carrots. In a separate small bowl, mix the rice vinegar, sugar, and salt until dissolved. Pour over the vegetables, stir, and let sit for at least 30 minutes or refrigerate overnight for best results.

Marinate the porkIn a bowl, mix the fish sauce, honey, and minced garlic. Add the sliced pork and marinate for at least 15 minutes (longer if time permits).

Cook the porkHeat a skillet over medium-high heat. Add the marinated pork and cook for 6-8 minutes until the meat is caramelized and cooked through. Remove from heat and set aside.

Toast the breadPreheat your oven to 350°F (175°C). Place the split baguettes on a baking sheet and toast for 3-5 minutes until they're crispy on the outside but still soft on the inside.

Prepare the spreadSpread mayonnaise on one side of each baguette and drizzle Maggi seasoning or soy sauce on the other side.

Assemble the sandwichesLayer the cooked pork onto the bottom half of each baguette. Top with drained pickled vegetables, cucumber slices, cilantro sprigs, and jalapeño slices if using.
