  1. Prepare the rice
    Combine the rinsed rice and water in a medium saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until water is absorbed. Remove from heat and let stand, covered, for 10 minutes.
  2. Season the rice
    In a small saucepan, combine rice vinegar, sugar, and salt. Heat until sugar dissolves. Transfer the cooked rice to a large wooden bowl and pour the vinegar mixture over it. Fold gently with a rice paddle to incorporate the seasoning while cooling the rice. Fan the rice to help it cool to room temperature.
  3. Prepare the rolling station
    Cover your bamboo mat with plastic wrap to prevent sticking. Place a bowl of water with a splash of vinegar nearby to moisten your hands (this prevents the rice from sticking to your fingers).
  4. Assemble and roll
    Place a sheet of nori on the bamboo mat. With wet hands, spread about 3/4 cup of rice evenly over the nori, leaving a 1/2-inch border at the top. Sprinkle sesame seeds over the rice. Flip the nori so the rice side is facing down on the mat. Along the center of the nori, arrange strips of crab meat, avocado, and cucumber.
  5. Create the inside-out roll
    Lift the edge of the mat closest to you, and roll forward, enclosing the fillings. Apply gentle pressure to form a compact roll. Continue rolling until completely sealed. Use the mat to shape the roll into a rectangle by pressing gently on all four sides.
  6. Cut the rolls
    With a very sharp knife moistened with the vinegar water, cut each roll into 8 pieces. Clean the knife between cuts for the cleanest slices. Arrange on a serving platter.
  7. Prepare the accompaniments
    Arrange small dishes of soy sauce, wasabi paste, and pickled ginger alongside the sushi rolls. These traditional condiments enhance the flavor of the California rolls.
