  1. Cook the Rice
    Combine the rinsed rice and water in a rice cooker or medium saucepan. If using a saucepan, bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until water is absorbed. Remove from heat and let stand, covered, for 10 minutes.
  2. Season the Rice
    In a small bowl, combine rice vinegar, sugar, and salt, stirring until dissolved. Transfer the cooked rice to a large wooden or glass bowl and gently fold in the vinegar mixture while the rice is still warm. Fan the rice while mixing to help it cool quickly and create a glossy texture. Cover with a damp cloth to prevent drying.
  3. Prepare the Fillings
    Cut all of your filling ingredients into thin strips or pieces of similar size. Arrange them on a plate for easy assembly. If using raw fish, ensure it's sashimi-grade and properly handled. Keep a small bowl of water nearby to wet your hands during the rolling process.
  4. Set Up the Rolling Station
    Place a bamboo rolling mat on a clean, dry surface with the slats running horizontally. Lay a sheet of nori, shiny side down, on the mat. Keep a small bowl of water handy to moisten your fingers, which prevents the rice from sticking to them.
  5. Spread the Rice
    With wet fingers, spread about 3/4 cup of the prepared sushi rice evenly over the nori, leaving a 1-inch border at the top edge of the sheet. Press rice gently to ensure it sticks to the nori. For inside-out rolls, cover the entire sheet with rice and then flip it over before adding fillings.
  6. Add Fillings and Roll
    Arrange your choice of fillings in a line across the center of the rice. Lift the edge of the mat closest to you, holding the fillings in place with your fingers, and roll forward, enclosing the fillings. Continue rolling forward while applying even pressure to create a compact cylinder. Use the mat to shape the roll into a rectangle by pressing gently on all sides.
  7. Cut the Rolls
    With a very sharp knife dipped in water, cut each roll into 6-8 pieces. Clean the knife with a damp cloth between cuts to ensure clean edges. For the best presentation, cut in half first, then line up the halves and cut into equal pieces.
  8. Serve
    Arrange the sushi pieces on a serving platter. Garnish with pickled ginger and wasabi. Serve immediately with small dishes of soy sauce for dipping. For best flavor and texture, sushi should be consumed within a few hours of preparation.
