Prepare the riceCook the sushi rice according to package instructions. While still warm, mix with rice vinegar, sugar, and salt in a large bowl. Gently fold the mixture to combine without crushing the rice grains. Let cool to room temperature.

Assemble the base rollPlace a bamboo sushi mat on a clean work surface. Lay a sheet of plastic wrap over the mat to prevent sticking. Place one sheet of nori, shiny side down, on the plastic wrap. With wet hands, spread about 1/2 cup of prepared sushi rice evenly over the nori, leaving a 1-inch border at the top.

Fill the rollArrange cucumber strips, imitation crab sticks, and avocado slices in a horizontal line across the center of the rice. Using the bamboo mat as a guide, tightly roll the nori and rice over the fillings, applying gentle pressure to keep the roll firm. Continue rolling until you reach the border of nori.

Create the rainbow effectPlace the roll on a cutting board, seam side down. Arrange alternating slices of tuna, salmon, yellowtail, avocado, and shrimp on top of the roll, slightly overlapping to create a rainbow pattern. Cover with plastic wrap and gently press the toppings into the roll.

Cut and garnishUsing a sharp knife dipped in water, slice the roll into 8 equal pieces. Clean the knife between cuts for neat slices. Garnish each piece with a small amount of tobiko on top for color and texture.

ServeArrange the rainbow roll pieces on a serving plate. Serve with small dishes of soy sauce, wasabi, and pickled ginger. For an authentic presentation, add a small mound of wasabi and thinly sliced pickled ginger on the side of the plate.
