
Chili Garlic Tofu
Crispy tofu cubes glazed in a spicy, savory sauce

Prepare the tofuPress the tofu between paper towels for at least 15 minutes to remove excess moisture. Cut into 1-inch cubes and toss in a bowl with cornstarch until evenly coated.

Fry the tofuHeat vegetable oil in a large non-stick skillet over medium-high heat. Add the tofu cubes in a single layer and cook for 3-4 minutes on each side until golden and crispy. Work in batches if necessary to avoid overcrowding. Transfer to a paper towel-lined plate.

Prepare the sauceIn a small bowl, whisk together the chili garlic sauce, soy sauce, rice vinegar, maple syrup or brown sugar, and sesame oil. Set aside.

Sauté aromaticsIn the same skillet, add a little more oil if needed. Add the minced garlic, grated ginger, chopped dried chilies, and the white parts of the green onions. Stir-fry for 30-60 seconds until fragrant, being careful not to burn the garlic.

Combine and glazeReturn the crispy tofu to the skillet. Pour the sauce over the tofu and toss to coat evenly. Cook for 2-3 minutes until the sauce thickens slightly and forms a glaze around the tofu.

Garnish and serveRemove from heat and sprinkle with the green parts of the green onions and toasted sesame seeds. Serve immediately over steamed rice or noodles.
