  1. Cook the bacon
    In a large skillet over medium heat, cook the bacon until crispy, about 3-4 minutes per side. Transfer to a paper towel-lined plate to drain excess grease.
  2. Toast the bread
    While the bacon is cooking, lightly butter one side of each bread slice. Toast in a separate pan or toaster until golden brown, about 2-3 minutes.
  3. Fry the eggs
    In the same skillet used for bacon, reduce heat to medium-low and add 1 tablespoon of butter. Once melted, crack eggs into the pan, being careful not to break the yolks. Season with salt and pepper. For over-easy eggs, cook until whites are set (about 2 minutes) then flip gently and cook for another 30 seconds. For sunny-side up, cover the pan and cook until whites are set but yolks are still runny.
  4. Prepare the spread
    In a small bowl, mix mayonnaise with hot sauce if using. Spread on one side of each toasted bread slice.
  5. Assemble the sandwich
    Place lettuce (if using) on the bottom slice of bread, followed by avocado slices (if using), then bacon strips. Place the fried eggs on top, add cheese if desired, and cover with the second slice of bread, mayonnaise side down.
  6. Serve immediately
    Cut the sandwich in half diagonally for easier eating and serve while still warm. The yolk should be slightly runny for the best experience.
