  1. Sauté the aromatics
    Heat the olive oil in a large pot over medium heat. Add the diced onion and cook until translucent, about 5 minutes. Add the minced garlic, grated ginger, and chopped jalapeño, and cook for another 2 minutes until fragrant.
  2. Add vegetables and spices
    Add the diced sweet potato and red bell pepper to the pot. Stir in the tomato paste and spices (cumin, coriander, and cayenne). Cook for 2-3 minutes, stirring frequently to prevent the tomato paste from burning.
  3. Build the base of the stew
    Pour in the diced tomatoes with their juices and the vegetable broth. Bring the mixture to a boil, then reduce heat to maintain a simmer. Cook for 15 minutes, or until the sweet potatoes begin to soften.
  4. Incorporate the peanut butter
    In a medium bowl, whisk together the peanut butter with 1 cup of the hot broth from the pot until smooth. Pour this mixture back into the pot and stir well to combine. This technique prevents the peanut butter from clumping.
  5. Simmer and thicken
    Allow the stew to simmer for another 10 minutes, stirring occasionally. The stew will thicken as it cooks. If it becomes too thick, add a splash more broth or water to reach your desired consistency.
  6. Add greens and finish
    Stir in the chopped collard greens or kale. Simmer for an additional 5 minutes until the greens are wilted and tender. Taste and adjust seasoning with salt and pepper as needed.
