Add spices and sweet potatoesAdd the chili powder, cumin, smoked paprika, and cayenne (if using) to the pot and stir to coat the onions, cooking for 1 minute to toast the spices. Add the diced sweet potatoes and stir to coat with the spice mixture.

Build the chili basePour in the vegetable broth, diced tomatoes with their juices, and green chilies. Stir in the drained and rinsed black beans, maple syrup, and salt. Bring the mixture to a boil, then reduce heat to maintain a gentle simmer.

Simmer until tenderCover the pot and simmer for 30-35 minutes, stirring occasionally, until the sweet potatoes are tender but not falling apart. If the chili becomes too thick, add a little more broth or water.

Finish and adjust seasoningsUncover the pot and simmer for an additional 5-10 minutes to allow the chili to thicken slightly. Taste and adjust seasonings, adding more salt, spices, or a touch more sweetener if needed. Stir in the chopped cilantro just before serving.
