
Spicy Black Bean Burgers

Prepare the beansPlace half of the black beans in a large bowl and mash with a fork or potato masher until mostly smooth but still with some texture. Set aside the remaining whole beans.

Sauté the vegetablesHeat 1 tablespoon of olive oil in a skillet over medium heat. Add the diced red onion, bell pepper, jalapeño, and garlic. Sauté for 5-7 minutes until softened and fragrant. Allow to cool for 5 minutes.

Combine the mixtureAdd the sautéed vegetables to the bowl with the mashed beans. Add the remaining whole beans, breadcrumbs, beaten egg, cumin, chili powder, smoked paprika, cilantro, lime juice, salt, and pepper. Mix thoroughly until well combined.

Form the pattiesDivide the mixture into 4-6 equal portions (depending on desired size). With lightly oiled hands, form each portion into a patty about 3/4 inch thick. Place formed patties on a plate and refrigerate for at least 10 minutes to firm up.

Cook the burgersHeat the remaining tablespoon of olive oil in a large skillet over medium-high heat. Cook the patties for 4-5 minutes on each side until they develop a crispy exterior and are heated through.
