
Smoky Lentil and Sweet Potato Soup

Sauté the aromaticsHeat olive oil in a large pot over medium heat. Add the diced onion and cook until translucent, about 5 minutes. Add the minced garlic and cook for another 30 seconds until fragrant.

Add vegetables and spicesAdd the diced carrots and sweet potatoes to the pot. Stir in the smoked paprika, cumin, coriander, and cayenne pepper (if using). Cook for 2-3 minutes, stirring constantly to coat the vegetables with the spices and allow the flavors to bloom.

Cook the lentilsAdd the rinsed lentils, vegetable broth, and diced tomatoes to the pot. Bring to a boil, then reduce heat to low and simmer, partially covered, for about 25-30 minutes, or until the lentils and sweet potatoes are tender.

Blend for creaminessUsing an immersion blender, partially blend the soup to create a creamy texture while still leaving some chunks for texture. If you don't have an immersion blender, transfer about 1/3 of the soup to a regular blender, process until smooth, then return to the pot.

Final touchesStir in the lemon juice and season with salt and pepper to taste. If the soup is too thick, add a little more broth or water to reach your desired consistency.

Serve and garnishLadle the soup into bowls and garnish with fresh cilantro or parsley. Serve hot with crusty bread for a complete meal.
