  1. Sauté the aromatics
    Heat olive oil in a large pot over medium heat. Add the onion, carrots, and celery. Cook for 5-7 minutes until vegetables have softened. Add the garlic, cumin, and thyme, and cook for another minute until fragrant.
  2. Add lentils and liquids
    Add the lentils, diced tomatoes with their juices, bay leaf, and broth to the pot. Stir to combine. Bring to a boil, then reduce heat to low and simmer, partially covered.
  3. Simmer until tender
    Cook for 30-35 minutes, stirring occasionally, until the lentils are tender but not mushy. Add more broth if the soup becomes too thick during cooking.
  4. Add finishing touches
    Remove the bay leaf. Stir in the lemon juice and spinach (if using) and cook for 2-3 minutes until spinach is wilted. Season with salt and pepper to taste.
  5. Serve and garnish
    Ladle the soup into bowls, garnish with fresh parsley, and serve hot. Optionally, serve with crusty bread or a dollop of yogurt on top.
