
Vegetable Barley Soup

Sauté the aromaticsHeat olive oil in a large soup pot over medium heat. Add onions, carrots, and celery. Cook for 5-7 minutes until vegetables begin to soften. Add garlic and cook for another 30 seconds until fragrant.

Add barley and liquidsAdd the pearl barley to the pot and stir to coat with oil. Pour in the vegetable broth and diced tomatoes with their juice. Add bay leaves and thyme, then bring the mixture to a boil.

Simmer the soupReduce heat to low, cover the pot, and simmer for 25 minutes, until the barley is partially cooked but still firm.

Add remaining vegetablesAdd the zucchini and green beans to the pot. Continue to simmer for another 15-20 minutes, until all vegetables and the barley are tender.

Season and serveRemove bay leaves. Season the soup with salt and freshly ground black pepper to taste. Ladle into bowls and garnish with fresh chopped parsley before serving.
