
One-Pot Vegetable Stew

Sauté the aromaticsHeat olive oil in a large pot over medium heat. Add the diced onion and cook for 3-4 minutes until translucent. Add minced garlic and cook for another 30 seconds until fragrant.

Add root vegetablesAdd carrots, celery, and potatoes to the pot. Stir and cook for about 5 minutes, allowing the vegetables to begin softening and developing flavor.

Incorporate remaining vegetablesAdd zucchini and bell pepper to the pot. Stir to combine with the other vegetables and cook for another 3 minutes.

Add liquids and seasoningsPour in the diced tomatoes with their juice and vegetable broth. Add the bay leaf, dried thyme, and season with salt and pepper. Bring to a boil, then reduce heat to low and cover.

Simmer the stewLet the stew simmer for about 25 minutes, or until the potatoes are fork-tender. Stir occasionally to prevent sticking.

Add beans and greensStir in the drained and rinsed white beans and chopped spinach. Continue to simmer for an additional 5 minutes until the spinach is wilted and the beans are heated through.

Adjust seasoningTaste and adjust salt and pepper as needed. Remove the bay leaf before serving.
