  1. Sauté the aromatics
    Heat olive oil in a large pot over medium heat. Add the diced onion and sauté for 5 minutes until translucent. Add the minced garlic and cook for an additional 30 seconds until fragrant.
  2. Add vegetables and spices
    Add the diced carrots to the pot and cook for 3-4 minutes. Stir in the ground cumin, coriander, cinnamon, paprika, and cayenne pepper. Toast the spices for 1 minute, stirring constantly to prevent burning.
  3. Incorporate main ingredients
    Add the chickpeas, diced tomatoes with their juice, and vegetable broth to the pot. Stir well to combine all ingredients and scrape up any browned bits from the bottom of the pot.
  4. Simmer the stew
    Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 25 minutes, stirring occasionally, until the stew has thickened and the flavors have melded together.
  5. Add dried fruit
    Stir in the chopped dried apricots and continue to simmer, uncovered, for an additional 10 minutes. The apricots will soften and infuse the stew with a subtle sweetness that balances the spices.
  6. Finish and serve
    Season with salt and pepper to taste. Ladle the stew into bowls, garnish with freshly chopped cilantro, and serve with lemon wedges on the side for squeezing over the top just before eating.
