  1. Prepare the vegetables
    Preheat your oven to 425°F (220°C). In a large bowl, toss the zucchini, eggplant, bell peppers, red onion, and carrots with 2 tablespoons of olive oil, 1 teaspoon cumin, 1 teaspoon coriander, salt, and pepper. Spread them evenly on a large baking sheet.
  2. Roast the vegetables
    Place the baking sheet in the oven and roast for 25-30 minutes, stirring halfway through, until the vegetables are tender and starting to caramelize at the edges.
  3. Prepare the couscous
    While the vegetables are roasting, bring the vegetable broth to a boil in a medium saucepan. Remove from heat, stir in the remaining 1 tablespoon olive oil, remaining 1 teaspoon cumin, cinnamon, and a pinch of salt. Add the couscous, stir quickly, cover with a lid, and let it sit for 5 minutes.
  4. Fluff the couscous
    After 5 minutes, remove the lid and fluff the couscous with a fork to separate the grains. Let it cool slightly.
  5. Combine and serve
    In a large serving bowl, gently fold the roasted vegetables into the couscous. Add the chopped mint and parsley, reserving a small amount for garnish. Adjust seasoning with salt and pepper to taste.
  6. Garnish and finish
    Sprinkle the top with toasted nuts, the remaining herbs, and an extra drizzle of olive oil if desired. Serve warm or at room temperature.
