  1. Prepare the meat
    In a large pot, cook the meat with salt, half of the chopped onions, and 1 bouillon cube until tender, about 30-40 minutes. Keep the stock for later use.
  2. Mix the egusi paste
    In a bowl, mix the ground egusi seeds with enough water to form a smooth paste. Set aside.
  3. Start the soup base
    Heat the palm oil in a large pot until hot. Add the remaining chopped onions and sauté until translucent. Add the cooked meat, smoked fish, and meat stock.
  4. Add the egusi mixture
    Gently pour the egusi paste into the pot by spoonfuls, allowing it to form small lumps in the soup. Cover and let simmer on medium-low heat for about 20 minutes, stirring occasionally to prevent burning.
  5. Season the soup
    Add the ground crayfish, hot pepper, remaining bouillon cube, and salt to taste. Stir well and let simmer for another 10 minutes.
  6. Add the vegetables
    Add the chopped spinach or bitter leaf to the soup. Stir gently and cook for about 5-7 minutes until the vegetables are wilted but still green.
  7. Prepare the fufu
    In a separate pot, bring 4 cups of water to a boil. In a large bowl, mix the cassava flour with 2 cups of cold water to form a paste. Slowly pour the cassava paste into the boiling water, stirring continuously to prevent lumps.
  8. Finish the fufu
    Continue stirring the fufu vigorously with a wooden spoon until it becomes thick and smooth, about 5-7 minutes. Shape into balls and serve hot alongside the egusi soup.
