  1. Prepare the greens
    If using cocoyam leaves, blanch them in boiling water for 5 minutes to reduce the calcium oxalate content (which causes itchiness). Drain thoroughly and set aside. If using spinach or collard greens, just wash thoroughly and chop.
  2. Cook the meat (if using)
    In a large pot, boil the meat with 1 chopped onion, 1 bouillon cube, salt, and pepper until tender, about 30 minutes. Remove the meat but reserve the broth.
  3. Prepare the base
    Heat palm oil in a large pot over medium heat. Add onions and sauté until translucent, about 3-4 minutes. Add ginger, garlic, and chili peppers, and cook for another 2 minutes until fragrant.
  4. Build the stew
    Add crushed tomatoes and tomato paste to the pot. Stir well and simmer for 5-7 minutes until the oil begins to separate from the tomato mixture.
  5. Add protein and seasonings
    Add the flaked smoked fish, cooked meat (if using), mushrooms (if using), and the remaining bouillon cube. Stir to combine and cook for 5 minutes.
  6. Incorporate the greens
    Add the prepared cocoyam leaves or greens to the pot. Stir well to combine with the sauce. If the mixture seems too dry, add some of the reserved meat broth or water.
  7. Add egusi and simmer
    Sprinkle the ground egusi or pumpkin seeds over the stew and stir to incorporate. Reduce heat to low, cover the pot, and simmer for 20-25 minutes, stirring occasionally to prevent sticking.
  8. Final seasoning
    Taste and adjust seasoning with salt and pepper. The stew should be thick and flavorful. Serve hot with boiled rice, boiled yams, or fufu.
