  1. Prepare the meat
    Season the meat with salt, pepper, and one bouillon cube. In a large pot, bring 3 cups of water to a boil, add the meat and simmer for about 30-40 minutes until tender. Reserve the meat broth.
  2. Make the light soup base
    In a blender, combine tomatoes, half the onion, ginger, garlic, and scotch bonnet peppers. Blend until smooth. Heat palm oil in a pot over medium heat, add the remaining chopped onion and sauté until translucent. Pour in the blended mixture and cook for 5-7 minutes, stirring occasionally.
  3. Complete the soup
    Add the cooked meat, reserved meat broth, remaining bouillon cube, and ground crayfish (if using) to the soup base. Simmer for 15-20 minutes, stirring occasionally. Add the chopped basil or utazi leaves in the last 5 minutes of cooking. Season with salt and pepper to taste.
  4. Prepare the cassava and plantain
    While the soup is simmering, boil the cassava and plantain chunks in the remaining 3 cups of water until very soft, about 20-25 minutes. Drain well, ensuring no water remains.
  5. Pound the fufu
    Traditionally, the cooked cassava and plantain are pounded using a wooden mortar and pestle until they form a smooth, stretchy dough. Alternatively, you can use a food processor or potato masher, adding a small amount of water if needed to achieve the right consistency. The fufu should be sticky but firm enough to shape.
  6. Shape the fufu
    With wet hands, take a portion of the fufu and shape it into a smooth ball or dome. Place on a serving plate.
  7. Serve the dish
    Ladle the hot light soup into bowls, including pieces of meat. Serve alongside the shaped fufu. Traditionally, diners break off small pieces of fufu with their fingers, form a small indentation, and use it to scoop up the soup.
