  1. Prepare the okra
    Rinse the okra thoroughly and pat dry with paper towels. Trim the stems and slice into 1/2-inch rounds. If you want to reduce the sliminess, toss the sliced okra with 1 tablespoon of lemon juice and let it sit for 10 minutes before rinsing again.
  2. Sauté the aromatics
    Heat the vegetable oil in a large pot over medium heat. Add the diced onion and cook until translucent, about 5 minutes. Add the minced garlic and sauté for another minute until fragrant.
  3. Cook the meat (if using)
    If using meat, add it to the pot and brown on all sides, about 5-7 minutes. Add the ground coriander, cayenne pepper, and smoked paprika. Stir to coat the meat evenly with the spices.
  4. Add vegetables
    Add the diced red bell pepper and chopped tomatoes to the pot. Cook for 3-4 minutes until the tomatoes begin to break down and release their juices.
  5. Add okra and broth
    Add the sliced okra to the pot and stir to combine. Pour in the chicken or vegetable broth and bring to a boil. Reduce heat to low, cover, and simmer for 20-25 minutes, or until the okra is tender but not mushy.
  6. Season and finish
    Season with salt and freshly ground black pepper to taste. Stir in the remaining lemon juice to brighten the flavors. If the soup is too thin, you can simmer uncovered for a few more minutes to thicken it. If it's too thick, add a little more broth.
