  1. Prepare the beans
    After soaking the black-eyed peas overnight, rub them between your palms to remove the skins. Rinse thoroughly until the water runs clear. This step is crucial for a smooth pudding texture.
  2. Blend the mixture
    In a blender, combine the peeled beans, red bell pepper, and half of the chopped onion. Add enough water (about 1 cup) to help it blend into a smooth, thick paste. The consistency should be slightly thicker than pancake batter.
  3. Season the batter
    Transfer the bean mixture to a large bowl. Add the vegetable oil, ground crayfish (if using), crumbled bouillon cubes, cayenne pepper, salt, and the remaining chopped onion. Mix thoroughly until all ingredients are well incorporated.
  4. Prepare the molds
    If using banana leaves, quickly pass them over an open flame to make them pliable, then cut into squares. If using aluminum foil or ramekins, lightly grease them with oil. Small empty, cleaned, and oiled tin cans also work well.
  5. Fill the molds
    Pour the bean mixture into your prepared molds, filling them about 3/4 full to allow room for expansion. If using protein additions like corned beef, hard-boiled eggs, or sardines, add them in the middle of the mixture.
  6. Steam the pudding
    Arrange the filled molds in a large pot with about 2 inches of water at the bottom. Cover tightly and steam over medium heat for about 45-60 minutes. Add more hot water to the pot as needed to prevent it from drying out.
  7. Test for doneness
    Insert a toothpick into the center of a pudding. If it comes out clean with no wet batter, the Moin Moin is done. The pudding should be firm to the touch but still moist.
  8. Serve
    Allow the Moin Moin to cool slightly before unmolding. Serve warm as a side dish with jollof rice, fried rice, or as a main dish with a side of spicy sauce or stew.
