  1. Clean and prepare the meat
    Rinse the meat thoroughly under cold water. Place in a pot, add enough water to cover, and bring to a boil for 5 minutes. Drain and rinse again to remove impurities.
  2. Season the meat
    Return the meat to the pot. Add chopped onions, minced garlic, grated ginger, beef bouillon cubes, and half of the pepper soup spice mix. Cover with 2 liters of water or beef stock.
  3. Cook the meat until tender
    Bring to a boil, then reduce heat to medium-low. Cover and simmer for about 45-60 minutes, or until the meat is tender. Add more water if needed during cooking.
  4. Add the remaining spices
    Add the Scotch bonnet peppers, remaining pepper soup spice mix, ground crayfish (if using), and salt to taste. Continue to simmer for another 10 minutes.
  5. Finish with herbs
    Add the chopped utazi leaves (if using) and fresh basil. Simmer for an additional 5 minutes to allow the flavors to meld together.
  6. Adjust seasoning
    Taste and adjust the seasoning with salt and pepper as needed. The soup should be spicy, aromatic, and flavorful.
  7. Serve hot
    Ladle the hot pepper soup into bowls. This soup is traditionally served very hot, often as a starter or as a main dish with boiled yam, rice, or plantains on the side.
