  1. Prepare the avocado spread
    In a medium bowl, combine the mashed avocados with lime juice, salt, and pepper. Mix well until smooth and creamy. This will prevent the avocado from browning and add flavor.
  2. Warm the tortillas
    Heat a large skillet over medium heat. Lightly brush one side of each tortilla with olive oil. Place tortilla oil-side down in the skillet and warm for about 30 seconds until pliable and slightly toasted. Repeat with remaining tortillas.
  3. Assemble the wraps
    Lay the warmed tortillas on a clean work surface. Spread 1 tablespoon of Greek yogurt or sour cream on each tortilla, followed by an even layer of the avocado mixture, leaving about a 1-inch border around the edges.
  4. Add fillings
    Divide the turkey slices evenly among the tortillas. Top with lettuce or mixed greens, tomato slices, red onion, and cilantro leaves if using.
  5. Roll the wraps
    Fold in the sides of each tortilla, then roll up tightly from the bottom, tucking in the sides as you roll to create a secure wrap. If needed, secure with toothpicks.
  6. Slice and serve
    Using a sharp knife, cut each wrap diagonally in half. Arrange on plates and serve immediately, or wrap tightly in parchment paper or plastic wrap if taking to go.
