  1. Prepare the yogurt base
    In a large bowl, whisk the yogurt until smooth and creamy. Add a pinch of salt and whisk again. This creates a smooth base for your raita.
  2. Add fresh vegetables
    Add the diced tomatoes, cucumber (if using), chopped red onion, green chili, and fresh cilantro to the yogurt. Gently fold everything together to combine.
  3. Season the mixture
    Sprinkle half of the ground cumin and red chili powder over the yogurt mixture. Add salt to taste and mix well. The spices should be evenly distributed throughout.
  4. Prepare the tempering (tadka)
    Heat oil or ghee in a small pan over medium heat. Add cumin seeds and mustard seeds (if using). Once they start to splutter (about 30 seconds), remove from heat immediately.
  5. Finish the raita
    Pour the hot tempering over the yogurt mixture. Sprinkle the remaining ground cumin on top. Garnish with a few cilantro leaves. Allow to cool for 5 minutes before serving.
  6. Chill before serving
    For best results, refrigerate the raita for at least 30 minutes before serving to allow the flavors to meld together. Serve cold as a side dish with biryani, pulao, or any spicy Indian meal.
