
Sweet Pumpkin Congee
A comforting Asian rice porridge with sweet pumpkin

Prepare the riceRinse the jasmine rice thoroughly under cold water until the water runs clear. This removes excess starch and prevents the congee from becoming too gummy.

Start the congee baseIn a large pot, combine the rinsed rice with 8 cups of water or vegetable broth. Add the cinnamon stick and ginger slices. Bring to a boil over high heat, then reduce to a simmer and cover partially with a lid.

Cook the baseSimmer the rice mixture for about 20 minutes, stirring occasionally to prevent sticking. The rice should start to break down and the mixture should begin to thicken.

Add the pumpkinAdd the cubed pumpkin or kabocha squash to the pot along with the salt and brown sugar. Stir well to combine. Continue to simmer for another 20-25 minutes until the pumpkin is very tender and starting to dissolve into the congee.

Adjust consistency and flavorIf the congee becomes too thick, add more water or broth to reach your desired consistency. Taste and adjust sweetness by adding more sugar if needed. For a creamier texture, stir in the coconut milk during the last 5 minutes of cooking.

Serve and garnishRemove the cinnamon stick and ginger slices. Ladle the hot congee into bowls, drizzle with honey or maple syrup if desired, and sprinkle with toasted pumpkin seeds for a delightful crunch.
