  1. Prepare the rice
    Place the washed rice in a large pot and add the water or chicken stock. Bring to a boil over high heat, then reduce to a simmer.
  2. Add the grains
    After the rice has simmered for 20 minutes, add the pearl barley, black glutinous rice, and mung beans to the pot. Stir well to combine and prevent sticking to the bottom.
  3. Introduce the dried fruits
    After another 20 minutes, add the lotus seeds, goji berries, red dates, and longan fruit to the congee. Continue to simmer, stirring occasionally to prevent the mixture from sticking.
  4. Sweeten the congee
    When the congee has been cooking for about 1 hour total and has thickened considerably, add the rock sugar and stir until completely dissolved. Adjust sweetness to taste.
  5. Add final flavorings
    If using, stir in the coconut milk and ground cinnamon. Continue to simmer for another 10-15 minutes until the congee reaches your desired consistency, adding more water if it becomes too thick.
  6. Rest and serve
    Remove from heat and let the congee rest for 5-10 minutes before serving. The congee should be thick but still pourable. Serve hot in individual bowls.
