  1. Prepare the rice
    In a large pot, combine the jasmine rice and chicken broth. Bring to a boil over high heat, then reduce to medium-low heat and simmer, stirring occasionally to prevent sticking, for about 15 minutes until the rice is tender and starting to break down.
  2. Add aromatics
    Stir in the grated ginger, minced garlic, and white parts of the green onions. Continue to simmer for 5 minutes, allowing the aromatics to infuse the broth.
  3. Cook the chicken
    Add the sliced chicken thighs to the pot. Stir gently and cook for about 5-7 minutes until the chicken is fully cooked through. Skim off any foam that rises to the surface.
  4. Season the soup
    Add the fish sauce, soy sauce, and white pepper. Adjust the seasoning to taste, adding more fish sauce if needed for saltiness. The soup should have a balanced savory flavor.
  5. Finish and garnish
    Just before serving, stir in the lime juice. Ladle the hot soup into bowls and garnish with the green parts of the scallions, fresh cilantro, and fried garlic if using. Serve immediately while hot.
