
Fish Congee
Silky rice porridge with tender fish and savory aromatics

Prepare the riceIn a large pot, combine the rinsed rice with 8 cups of chicken broth or fish stock. Bring to a boil over high heat, then reduce to a simmer. Stir occasionally to prevent the rice from sticking to the bottom.

Cook the congee baseSimmer the rice mixture uncovered for about 1 hour, stirring occasionally, until the rice breaks down and the mixture becomes thick and creamy with a porridge-like consistency. Add more broth or water if it becomes too thick.

Prepare the fishWhile the congee is cooking, place the fish pieces in a bowl. Add rice wine, 1 teaspoon of soy sauce, and a pinch of white pepper. Gently mix and let marinate for 10-15 minutes.

Add aromaticsWhen the congee has reached the desired consistency, add the julienned ginger, minced garlic, and the white parts of the green onions. Stir and simmer for 5 minutes to infuse the flavors.

Cook the fishGently add the marinated fish pieces to the congee, stirring carefully to prevent breaking them. Simmer for about 5-7 minutes until the fish is just cooked through and opaque.

Season and finishAdd the remaining soy sauce, sesame oil, and white pepper. Taste and adjust seasonings as needed. Remove from heat once the flavors are balanced.

Garnish and serveLadle the hot congee into bowls. Top each serving with the green parts of the green onions, chopped cilantro, and fried shallots or garlic if using. Serve immediately with additional soy sauce on the side if desired.
