
Crab Congee
Silky rice porridge with delicate crab meat and aromatics

Prepare the riceRinse the jasmine rice thoroughly under cold water until the water runs clear. This removes excess starch and prevents the congee from becoming too gummy.

Start the congee baseIn a large pot, bring the chicken stock or water to a boil. Add the rinsed rice and half of the julienned ginger. Reduce heat to low, cover, and simmer for 45 minutes, stirring occasionally to prevent sticking. The rice should break down and create a thick, creamy porridge.

Prepare the crabWhile the congee is cooking, heat the vegetable oil in a small pan over medium heat. Add the minced garlic and remaining ginger, and sauté until fragrant, about 30 seconds. Add the rice wine and stir for another 30 seconds to cook off the alcohol. Set aside.

Add the crabWhen the congee has reached a creamy consistency, gently fold in the crab meat, the garlic-ginger mixture, soy sauce, and white pepper. Continue to simmer for 10 minutes to infuse the flavors.

Final seasoningTurn off the heat and stir in the sesame oil. Taste and adjust seasoning with additional soy sauce or white pepper if needed. The congee should be silky and flavorful with the delicate taste of crab throughout.

Serve and garnishLadle the hot congee into serving bowls. Garnish with sliced green onions and chopped cilantro. Serve immediately while steaming hot.
