Prepare the riceRinse the rice under cold water until the water runs clear. This removes excess starch and prevents the porridge from becoming too gummy.

Cook the basic porridgeIn a large pot, combine the rinsed rice and water or dashi stock. Bring to a boil over high heat, then reduce to a low simmer. Cover partially with a lid and simmer for about 30-40 minutes, stirring occasionally to prevent sticking, until the rice has broken down and the mixture has a porridge-like consistency.

Season the porridgeOnce the rice has reached the desired consistency, add the salt, soy sauce, and mirin. Stir well and continue to simmer for another 5 minutes to allow the flavors to meld together.

Add finishing touchesJust before serving, stir in the freshly grated ginger and sesame oil for aromatic flavor. The heat from the porridge will release the ginger's fragrance and oils.

Serve and garnishLadle the hot okayu into individual serving bowls. Top each bowl with sliced green onions, strips of nori seaweed, and chopped umeboshi plums if using. These toppings add color, texture, and additional flavor to the comforting porridge.
