
Sticky Rice Pudding
Creamy, aromatic Thai dessert with coconut milk and fresh mango

Prepare the riceDrain the soaked glutinous rice. Line a steamer basket with cheesecloth and add the rice. Steam over boiling water for 20-25 minutes until the rice is translucent and tender.

Make the coconut mixtureWhile the rice is cooking, combine 1 cup of coconut milk, 1/2 cup sugar, salt, and pandan leaves (or extract) in a small saucepan. Heat over medium-low heat until the sugar dissolves, but do not let it boil. Remove from heat and set aside.

Mix rice with coconut mixtureWhen the rice is cooked, transfer it to a bowl and pour the warm coconut milk mixture over it. Stir gently to combine, then cover and let sit for 15 minutes to allow the rice to absorb the liquid.

Prepare coconut sauceIn a small saucepan, combine the remaining 1/2 cup coconut milk and 1/4 cup sugar. Bring to a gentle simmer, then add the cornstarch mixture. Stir continuously until the sauce thickens slightly. Remove from heat and let cool.

Serve the dessertMound the sticky rice on serving plates. Arrange mango slices alongside or on top of the rice. Drizzle with the thickened coconut sauce. Sprinkle with toasted sesame seeds and mung beans if using. Garnish with mint leaves and serve immediately.
