
Sweet Sticky Rice with Durian
A decadent Thai dessert with creamy durian and coconut milk

Prepare the RiceDrain the soaked glutinous rice and rinse until water runs clear. Steam the rice in a bamboo steamer lined with cheesecloth or in a rice cooker with the sweet rice setting for about 20-25 minutes until tender and translucent.

Make Coconut SauceWhile the rice is cooking, in a medium saucepan over medium heat, combine 250ml coconut milk, 1/2 cup sugar, 1/4 teaspoon salt, and 2 pandan leaves. Stir until sugar dissolves, but do not let it boil. Remove from heat and set aside.

Season the RiceOnce the rice is cooked, transfer it to a large bowl. Gradually pour the warm coconut sauce over the hot rice, stirring gently to combine. Cover and let it rest for 15-20 minutes to allow the rice to absorb the sauce.

Prepare Durian MixtureIn a blender or food processor, blend the durian flesh until smooth. In a saucepan, heat the remaining 150ml coconut milk with 1/4 cup sugar and 1/4 teaspoon salt. Mix rice flour with 2 tablespoons of water to create a slurry, then add to the coconut milk mixture. Stir constantly until it thickens slightly. Add the blended durian and cook for 2-3 minutes. Remove from heat.

Make Coconut Cream ToppingIn a small saucepan, warm the remaining coconut milk with a pinch of salt. This will be used as a topping for serving.

Assemble the DessertIf using banana leaves, place a portion of sticky rice on a banana leaf. Create a small well in the center of the rice and fill it with the durian mixture. Alternatively, you can serve the sticky rice in a bowl with the durian mixture on top.

Garnish and ServeDrizzle the warm coconut cream topping over the dessert. Sprinkle with toasted sesame seeds and mung beans if using. Serve warm for the best flavor and texture experience.
