  1. Cook the Quinoa
    Combine quinoa and vegetable broth in a medium saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until liquid is absorbed and quinoa is fluffy. Remove from heat and let stand for 5 minutes.
  2. Roast the Sweet Potato
    Preheat oven to 400°F (200°C). Toss diced sweet potato with 1 tablespoon olive oil, salt, and pepper on a baking sheet. Roast for 20-25 minutes, turning halfway through, until tender and lightly browned.
  3. Prepare the Kale
    Place chopped kale in a large bowl. Drizzle with 1 teaspoon olive oil and a pinch of salt. Massage the kale with your hands for 2-3 minutes until it softens and becomes vibrant green.
  4. Make the Dressing
    In a small bowl, whisk together the remaining olive oil, lemon juice, tahini, maple syrup, and a pinch of salt and pepper until smooth and well combined.
  5. Assemble the Bowls
    Divide the cooked quinoa between bowls as the base. Arrange the massaged kale, roasted sweet potato, sliced avocado, blueberries, and pomegranate seeds in sections on top of the quinoa.
  6. Add Toppings and Serve
    Sprinkle the chia seeds and pumpkin seeds over the bowls. Drizzle with the prepared dressing and serve immediately while the quinoa and sweet potatoes are still warm.
