  1. Prepare the tuna
    Ensure your tuna is very fresh and sushi-grade. Pat it dry with paper towels and cut into 1/2-inch cubes. Place in a large mixing bowl and set aside.
  2. Make the sauce
    In a small bowl, whisk together the soy sauce, sesame oil, sriracha, rice vinegar, and honey until well combined. Taste and adjust spiciness by adding more sriracha if desired.
  3. Combine the ingredients
    Pour the sauce over the cubed tuna. Add the sliced green onions and half of the sesame seeds. Gently fold the mixture together, being careful not to break up the tuna pieces. Cover and refrigerate for 15 minutes to allow the flavors to meld.
  4. Prepare the vegetables
    While the tuna is marinating, dice the avocado and cucumber. Keep them separate from the tuna mixture until ready to serve to maintain their texture.
  5. Assemble the poke bowls
    Divide the cooled rice among four serving bowls. Top each with an equal portion of the marinated tuna mixture. Arrange the diced avocado and cucumber around the tuna.
  6. Garnish and serve
    Sprinkle each bowl with the remaining sesame seeds and chopped cilantro. Serve immediately for the freshest flavor and texture.
