  1. Cook the rice
    Combine the rinsed sushi rice and water in a medium saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let stand, covered, for 10 minutes.
  2. Season the rice
    In a small bowl, mix together rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the cooked rice while it's still warm. Allow the rice to cool to room temperature.
  3. Prepare the crab mixture
    In a medium bowl, gently mix the shredded imitation crab meat with 2 tablespoons of mayonnaise. Set aside.
  4. Make the spicy mayo
    In a small bowl, combine the remaining mayonnaise with sriracha sauce. Mix well and set aside for drizzling later.
  5. Assemble the bowls
    Divide the seasoned rice among four bowls. Arrange the crab mixture, diced avocado, and cucumber on top of the rice in separate sections.
  6. Add the toppings
    Sprinkle each bowl with toasted sesame seeds and nori strips. Drizzle with the spicy mayo and soy sauce. Add a small dab of wasabi paste on the side if desired.
