  1. Prepare the shrimp
    In a medium bowl, heat 1 tablespoon of oil over medium-high heat. Cook the shrimp for 2 minutes per side until pink and opaque. Remove from heat and let cool slightly before cutting into bite-sized pieces.
  2. Make the poke sauce
    In a small bowl, whisk together soy sauce, sesame oil, rice vinegar, and honey until well combined. Set aside 2 tablespoons of the sauce for drizzling later.
  3. Marinate the shrimp
    Toss the cooked shrimp pieces in the remaining poke sauce and let marinate for at least 10 minutes in the refrigerator while you prepare the other ingredients.
  4. Prepare the vegetables
    Dice the cucumber, slice the avocado, shred the carrots, and slice the green onions. If using frozen edamame, make sure it's thawed completely.
  5. Assemble the poke bowls
    Divide the cooked sushi rice among 4 bowls. Arrange the marinated shrimp and all prepared vegetables decoratively on top of the rice. Each bowl should have a colorful assortment of ingredients.
  6. Add the finishing touches
    Sprinkle each bowl with toasted sesame seeds and place nori strips around the edges. Drizzle with the reserved poke sauce and add sriracha mayo if desired.
