Instructions

  1. Prepare the shrimp
Pat the shrimp dry with paper towels. In a large bowl, combine the shrimp with 4 cloves of minced garlic, paprika, and cayenne pepper. Toss to coat evenly and let sit for 5 minutes.
  2. Cook the garlic base
In a large skillet over medium-high heat, melt the butter with olive oil. Add the remaining minced garlic and cook until fragrant but not browned, about 30 seconds.
  3. Cook the shrimp
Add the seasoned shrimp to the skillet in a single layer. Cook for 2 minutes on each side until pink and opaque. Drizzle with soy sauce and toss to coat. Remove from heat immediately to prevent overcooking.
  4. Assemble the bowls
Divide the cooked rice among four bowls. Top each bowl with a portion of the garlic shrimp, including the butter sauce from the pan.
  5. Add the toppings
Arrange the diced pineapple, avocado slices, and a sprinkle of green onions on top of each bowl. Garnish with fresh cilantro and serve with lime wedges on the side for squeezing.
