  1. Prepare the marinade
    In a medium bowl, whisk together the soy sauce, sesame oil, rice vinegar, and grated ginger until well combined. This will be the marinade for your octopus.
  2. Marinate the octopus
    Add the sliced octopus to the marinade and gently toss to coat. Cover and refrigerate for at least 15 minutes while you prepare the other ingredients.
  3. Prepare the rice base
    Divide the cooled sushi rice among four serving bowls. Lightly season with a small drizzle of rice vinegar if desired.
  4. Arrange the toppings
    Place the marinated octopus on top of the rice. Arrange the avocado slices, diced cucumber, and edamame around the octopus in separate sections.
  5. Add the garnishes
    Sprinkle the green onions and toasted sesame seeds over the bowl. Add the nori strips around the edge of the bowl for texture and flavor.
  6. Finish and serve
    Drizzle any remaining marinade over the bowl. Add sriracha if desired for heat. Serve immediately while the ingredients are fresh.
