  1. Cook the rice
    In a medium saucepan, combine the rinsed rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes until water is absorbed. Remove from heat and let stand, covered, for 10 minutes.
  2. Season the rice
    In a small bowl, whisk together rice vinegar, sugar, and salt until dissolved. Fold this mixture into the warm rice gently using a wooden spoon. Allow the rice to cool to room temperature.
  3. Prepare the crab mixture
    In a medium bowl, combine the imitation crab meat with mayonnaise and sriracha (if using). Gently mix until the crab is evenly coated.
  4. Prepare the toppings
    Dice the cucumber and avocado into small, bite-sized pieces. Cut the nori sheets into thin strips using kitchen scissors.
  5. Assemble the bowls
    Divide the seasoned rice among four bowls. Arrange the crab mixture, cucumber, and avocado on top of the rice in separate sections.
  6. Add the garnishes
    Sprinkle each bowl with nori strips and toasted sesame seeds. Serve with small dishes of soy sauce, wasabi, and pickled ginger on the side.
