Ingredients
Instructions
-
Prepare the riceCook the Japanese short-grain rice according to package instructions. Keep warm until ready to serve.
-
Cook the ground chicken soboroHeat a large skillet over medium heat and add the ground chicken. Break it up with a wooden spoon and cook until no longer pink. Add 2 tablespoons each of soy sauce, mirin, sake, and 1 tablespoon sugar. Continue cooking while stirring constantly until the liquid is mostly absorbed and the meat is crumbly, about 7-8 minutes. Transfer to a bowl and set aside.
-
Prepare the egg soboroIn a bowl, beat the eggs with 1 tablespoon sugar and ½ teaspoon salt. Heat a non-stick skillet over medium-low heat. Pour in the egg mixture and continuously stir with chopsticks or a fork to create small, fluffy curds. Cook until the eggs are just set but still slightly moist, about 3-4 minutes. Remove from heat and set aside.
-
Cook the green beansIn the same skillet used for the eggs (wiped clean), heat 1 tablespoon vegetable oil over medium heat. Add the green beans and stir-fry for 1 minute. Add 2 tablespoons water, cover, and steam for 2 minutes until bright green and crisp-tender. Uncover, add 1 tablespoon each of soy sauce, mirin, sake, and 1 tablespoon sugar. Cook until the liquid is absorbed, about 1-2 minutes. Season with ½ teaspoon salt.
-
Assemble the bowlsDivide the warm rice among 4 serving bowls. Arrange the three toppings (chicken soboro, egg soboro, and green beans) in sections on top of the rice, creating a colorful presentation with three distinct areas.
-
Garnish and servePlace a small amount of pickled red ginger in the center of each bowl where the three toppings meet. Serve immediately while all components are still warm.
