  1. Prepare the meat mixture
    In a large bowl, combine ground beef, breadcrumbs, beaten egg, half the diced onion, garlic, 1 tablespoon Worcestershire sauce, Dijon mustard, dried Italian herbs, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Mix gently with your hands until just combined, being careful not to overmix.
  2. Form and cook the patties
    Divide the meat mixture into 4 equal portions and shape into oval patties, about 3/4-inch thick. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the patties and cook for 4-5 minutes on each side until browned. Transfer to a plate and set aside.
  3. Make the mushroom gravy
    In the same skillet, add the remaining tablespoon of olive oil and butter. Add the remaining diced onion and cook until soft, about 3 minutes. Add sliced mushrooms and cook until they release their moisture and begin to brown, about 5-7 minutes. Season with salt and pepper.
  4. Thicken the gravy
    Sprinkle flour over the mushroom mixture and stir to coat. Cook for 1 minute, stirring constantly. Gradually whisk in beef broth and the remaining teaspoon of Worcestershire sauce. Bring to a simmer and cook until the gravy thickens, about 3-4 minutes.
  5. Return patties to gravy
    Reduce heat to low and return the beef patties to the skillet, nestling them into the gravy. Cover and simmer for 10 minutes, occasionally spooning gravy over the patties, until they are cooked through and the gravy has thickened further.
  6. Serve
    Serve the Salisbury steaks hot, generously topped with mushroom gravy. They pair perfectly with mashed potatoes, egg noodles, or steamed vegetables for a complete meal.
