
Beef and Mushroom Patties
Juicy homemade patties with umami-rich mushrooms

Prepare the mushroomsClean the mushrooms with a damp paper towel and finely chop them. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the mushrooms and cook until they release their moisture and it evaporates, about 5-7 minutes. Set aside to cool.

Sauté the aromaticsIn the same skillet, add the diced onion and cook until translucent, about 3-4 minutes. Add the minced garlic and cook for another 30 seconds until fragrant. Remove from heat and let cool.

Mix the patty ingredientsIn a large bowl, combine the ground beef, cooled mushrooms, onion-garlic mixture, egg, breadcrumbs, Worcestershire sauce, soy sauce, thyme, salt, and pepper. Mix gently with your hands until just combined, being careful not to overmix.

Form the pattiesDivide the mixture into 6 equal portions and shape into patties about 3/4 inch thick. Press your thumb into the center of each patty to create a slight indentation (this prevents the patties from bulging in the center when cooking).

Cook the pattiesHeat the remaining tablespoon of olive oil in a large skillet over medium-high heat. Cook the patties for about 4-5 minutes on each side for medium doneness, or adjust according to your preference. Alternatively, grill the patties over medium-high heat for the same amount of time.

Rest and serveTransfer the cooked patties to a plate and let them rest for 5 minutes before serving. This allows the juices to redistribute throughout the patty, resulting in a more flavorful and juicy bite.
