  1. Prepare the meat mixture
    In a large bowl, combine the ground beef, grated onion, minced garlic, chopped parsley, and mint. Add all the spices (cumin, coriander, allspice, cinnamon, paprika, cayenne if using), salt, and pepper. Mix thoroughly with your hands until all ingredients are well incorporated.
  2. Test the seasoning
    Take a small portion of the meat mixture and cook it in a pan over medium heat until browned. Taste and adjust seasonings in the remaining mixture if necessary.
  3. Form the kofta
    Divide the meat mixture into 12 equal portions. With damp hands, take one portion and mold it around a skewer, forming an elongated sausage shape about 4-5 inches long. Press the meat firmly around the skewer and flatten slightly. Repeat with remaining meat portions.
  4. Rest the kofta
    Place the prepared kofta skewers on a tray and refrigerate for at least 30 minutes (or up to 4 hours) to help them firm up and retain their shape during cooking.
  5. Preheat the grill
    Prepare a grill for medium-high heat cooking (around 400°F/200°C). Oil the grates lightly to prevent sticking.
  6. Grill the kofta
    Place the kofta skewers on the preheated grill. Cook for 6-8 minutes, turning occasionally, until browned on all sides and the internal temperature reaches 160°F (71°C) for medium doneness.
  7. Rest before serving
    Transfer the cooked kofta to a platter and let rest for 3-5 minutes before serving to allow the juices to redistribute.
