
Meatloaf with Brown Sugar Glaze

Prepare the ovenPreheat your oven to 350°F (175°C). Line a rimmed baking sheet with aluminum foil or parchment paper, or prepare a 9x5-inch loaf pan by lightly greasing it.

Sauté the vegetablesIn a skillet over medium heat, add a tablespoon of oil and sauté the diced onions and bell peppers until softened, about 5-7 minutes. Add the minced garlic and cook for another 30 seconds until fragrant. Remove from heat and let cool for 5 minutes.

Mix the meatloafIn a large bowl, combine the ground beef, beaten eggs, breadcrumbs, sautéed vegetable mixture, ketchup, Worcestershire sauce, Dijon mustard, dried thyme, salt, and black pepper. Mix gently with your hands until just combined, being careful not to overmix which can result in a dense meatloaf.

Shape the meatloafTransfer the mixture to the prepared baking sheet and shape it into a loaf approximately 9 inches long and 4-5 inches wide. Alternatively, press the mixture into the loaf pan, ensuring it's evenly distributed.

Prepare the glazeIn a small bowl, whisk together the glaze ingredients: ketchup, brown sugar, and apple cider vinegar until well combined and the sugar has dissolved.

Apply the glaze and bakeSpread half of the glaze evenly over the top and sides of the meatloaf. Bake in the preheated oven for 40 minutes. Then remove from the oven, carefully drain any excess fat if needed, and spread the remaining glaze over the meatloaf. Return to the oven and bake for an additional 15-20 minutes, or until the internal temperature reaches 160°F (71°C).

Rest the meatloafOnce done, remove the meatloaf from the oven and let it rest for 10 minutes before slicing. This allows the juices to redistribute throughout the meat, ensuring a moist and flavorful meatloaf.

Slice and serveSlice the meatloaf into 1-inch thick portions and serve hot with your favorite sides such as mashed potatoes, steamed vegetables, or a fresh salad.
