  1. Prepare the sauce
    In a small bowl, combine soy sauce, mirin, sake, sugar, and half of the grated ginger. Stir until sugar is completely dissolved. Set aside.
  2. Marinate the pork
    Place the thinly sliced pork in a bowl and add the remaining grated ginger and minced garlic. Mix well to coat the meat evenly and let it marinate for 5 minutes.
  3. Cook the onions
    Heat vegetable oil in a large skillet over medium heat. Add the sliced onions and cook until soft and translucent, about 3-4 minutes. Push the onions to the side of the pan.
  4. Cook the pork
    Add the marinated pork to the skillet and spread it out in a single layer. Cook for about 2-3 minutes until the bottom side is browned, then flip and cook for another 2 minutes until the pork is cooked through.
  5. Add the sauce
    Pour the prepared sauce over the pork and onions. Reduce the heat to medium-low and simmer for 2-3 minutes, until the sauce thickens slightly and coats the meat.
  6. Assemble the donburi
    Divide the cooked rice among four bowls. Top each bowl with an equal portion of the ginger pork and onion mixture, making sure to drizzle some of the sauce over the rice.
  7. Garnish and serve
    Sprinkle each bowl with sliced green onions and toasted sesame seeds. Add a small portion of pickled ginger on the side if desired. Serve immediately while hot.
