  1. Prepare the marinade
    In a large bowl, combine soy sauce, brown sugar, sesame oil, minced garlic, grated ginger, grated Asian pear (or apple sauce), and mirin. Whisk until sugar is dissolved and ingredients are well combined.
  2. Marinate the beef
    Add the thinly sliced beef to the marinade, ensuring all pieces are coated. Cover the bowl and refrigerate for at least 30 minutes, or up to 4 hours for deeper flavor penetration.
  3. Prepare the vegetables
    While the beef is marinating, prepare your vegetables. Julienne the carrots, slice the cucumber, blanch the spinach in boiling water for 30 seconds then rinse with cold water, and slice the green onions.
  4. Cook the beef
    Heat a large skillet over medium-high heat. Add the marinated beef in a single layer (you may need to cook in batches). Cook for 2-3 minutes per side until the meat is caramelized and cooked through. Transfer to a plate and continue with remaining beef.
  5. Assemble the bulgogi bowls
    Divide the cooked rice among four serving bowls. Arrange the cooked beef and prepared vegetables attractively on top of the rice. Add a tablespoon of kimchi to each bowl.
  6. Add the finishing touches
    Sprinkle each bowl with sliced green onions and toasted sesame seeds. If desired, drizzle with additional sesame oil or gochujang (Korean chili paste) for extra flavor.
